I originally bought MC for the single player aspect, but over time, mostly from realizing I am not very creative, I have come to love multiplayer much more than I ever felt about single player.

There are a lot of mods and mod packs out there. Ultimately just more complex survival with quests, but still feels fresh and different. A collection of mods to fit a sort of tense narrative.
To see single player potential, look up minecraft crash landing. I might pause for a few months and come back to find just enough new content to get me playing again, not even considering the gigantic expanse of mods. What has kept me playing this game longer than any other is the constant stream of updates. I personally don't go in for those maps much, but they're a worthy mention. Some with item drops and bosses, some with high scores and increasing waves of mobs, some target practice, some parkour or platforming, tower defense, so on. People have made hundreds of quality mini game maps. It runs in vanilla minecraft, but plays very differently. A good example is something like Diversity. That all aside (and that's a gross over simplification of survival single player) there are also custom maps. There are some things that are simply not intuitive, and plenty of tricks that can exponentially grow your fun with the game. I'd like to note also, this is a game there is no shame in doing so research on. I'd wager as long as you enjoy building things for more than just function, like making things look nice, you'd get as many hours as any other sandbox game.
Single player regular survival is fun enough for a while. There's a lot of fun to be had in single player in more ways than you might guess.
